Strongly attached to the quality and origin of the products he works with, the chef collaborates with local producers, uncompromisingly advocating the short circuit… even very short! Favoring organic farming, our chef visits the permaculture vegetable garden of the Domaine de Barbossi in Mandelieu-La Napoule every morning: a supply just a few beats from his piano that inspires both the daily suggestions and his entire menu.
